GF Cherry & Maple Syrup Pancakes

Makes 10 pancakes - Gluten Free, Vegan


Ingredients

  • 250g GF plain flour (or buckwheat flour)

  • 2tsp baking powder

  • 1tsp baking soda

  • 1tsp apple cider vinegar or lemon juice

  • 1tbsp flaxseed

  • 150ml non dairy milk

  • 1tbsp maple syrup

  • 1tbsp coconut oil, melted

  • coconut yoghurt, cherries, a banana and maple syrup to serve


Put the flour, baking powder, baking soda and flaxseed in a bowl and stir to combine. Stir in the milk, then the melted coconut oil, vinegar and maple syrup. Beat into a smooth thick batter.

Heat a non stick frying pan. Pour the batter into the pan to make 7.5cm/3” circles and cook on a medium heat. When bubbles appear on the surface and the base is golden turn the pancakes over and cook the other side. Repeat with the remaining batter.

Serve warm with coconut yoghurt, cherries, cut banana and maple syrup.
